Ingrid Adams, who recently joined Ohio State as a new faculty hire through InFACT and serves as an associate professor in the College of Medicine and State Extension Specialist in Food, Health and Human Behavior in the College of Food, Agricultural, and Environmental Sciences, writes about her research on developing critical thinking skills in low-income families who experience considerable health disparities and who are at increased risk for food insecurity, chronic diseases, morbidity, inadequate quality of care, and mortality.
